Made some "mayonnaise" today- best yet!! Slathered it on my pizza crust recipe (I'm calling it a taco shell for today) and tossed on a lettuce leaf and a tomato slice just to check it out; and it's great!!& Amazing how a ho-hum taco shell can be transformed with a great ingredient... MAYO! The watery, tasteless avocados might actually work well for this recipe now that I think about it. They are also a lighter green which is more visually appealing.
RAW MAYO (highly recommend doubling recipe for vita-mix blending purposes)
1 avocado
1/3 cup soaked raw cashews
salt and dill to taste
lemon juice to taste and for consistency (add slowly please)
