About Me
- Jo
- Wine Country, Ca, United States
- By day I am a Business owner, Mother and wife, house cleaner, taxi driver and laundress, obtaining physical health through raw food nutrition; this being my personal challenge. Actually I love cooking and learning new things, I am an on & off raw Foodist to help me with my Systemic Lupus; however I do eat raw fish and sometimes raw dairy. I guess I would consider myself a "raw pescatarian" aside from the occasional raw goats milk / cheese once in a blue moon.

Ugly but Beautiful NRG soup
Looks awful but tastes really beautiful and refreshing. N R G soup from Juliano.
1 recipe of water (juiced tomato, cucumber and lemon- but i used a lime)
1 Tbsp minced garlic
1/2 tablespoon ginger
1/2 tablespoon hot pepper (start to blend these so far)
1 c diced tomato
1 c mint
1/2 c onion
1/2 c red pepper (i used orange pepper)
1/2 c corn off the cob
1/3 c nama shoyu (oops! I forgt mine!)
1 apple, skinned & chopped
2 c fresh OJ
I eyeballed everything (typical me).I used a green chili pepper (nice kick) and used about 1/2 c loose packed mint, an entire corn off cob, oopsie daisy on the nama shoyu, and about 1 cup of OJ. Yum! I'd make it again despite how ugly it looks!

Real Live Breakfast Oatmeal
I made this today; it's Breakfast Oatmeal, from Juliano's book "Raw";
Soak 1/4 c raisins and about a cup of oats (rolled oats, raw) for about an hour; I put warm water in to help soften; When water is absorbed, drain any excess.
Toss about a cup of fruits of your choice in the blender.
Add the oats. I added blueberries & raspberries and two pitted dates. Blend and eat as is, or pour a bit of nutmilk over the top.
This is interesting to me, as the consistency is so creamy that I'm curious if it could freeze into an ice cream type dessert... it almost made a "gel" which I have a feeling would freeze well if blended even smoother. Ima gonna try it!
Raw Mayonnaise! YUM!
Made some "mayonnaise" today- best yet!! Slathered it on my pizza crust recipe (I'm calling it a taco shell for today) and tossed on a lettuce leaf and a tomato slice just to check it out; and it's great!!& Amazing how a ho-hum taco shell can be transformed with a great ingredient... MAYO! The watery, tasteless avocados might actually work well for this recipe now that I think about it. They are also a lighter green which is more visually appealing.
RAW MAYO (highly recommend doubling recipe for vita-mix blending purposes)
1 avocado
1/3 cup soaked raw cashews
salt and dill to taste
lemon juice to taste and for consistency (add slowly please)

Makeshift Dehydrator
I crack myself up.
So I've always liked the idea of dehydrating in the sun (who the heck wants to turn on the oven when it's blasted hot outside anyways?) but I DON'T care for the idea of buggies snacking on my schtuff. So I'm thinking about what I can use outside, and right in front of my nose is my two-tier wire fruit basket. VOILA! I can take some of my mesh fabric (which I make my nutmilk bags out of ) and grab my 14yr old daughter's sewing machine and whip a cover together. Sweet! And this fabric is SO tight that the tiniest bug wouldnt' be able to get in, yet sunshine and air can still flow through. Only two tiers for the basket tho, but oh well. It's a start.
(I'm already thinking about buying a brand new birdcage- Couldn't it be transformed as well? Possibly would look nice hanging on the deck too. No birds allowed tho. )
So I slice a couple fruits with my slicer on super-thin- Half a carrot and an apple to start. Just for fun. Later I make a "pizza crust" recipe from Juliano's book "Raw" and change it slightly, and below is the results. They are not totally dry yet (it wasn't as hot today as I expected, but still a great day to give it a whirl). they're still pliable (like a soft corn tortilla) but can be made more crisp like pizza crust with more drying.
Ingredients for the "pizza crust" are:
1 c oat groats, soaked (6 hrs)
1 T olive oil
1/2 cup ground flax seeds, add water to bind
1/2 cup ish carrot pulp
1 T honey or agave
Salt
Basil, onion powder garlic powder to taste ( a little goes a long way) or use fresh minced
Shape into flat patties, nice and thin. Great for soft taco or sandwich or pizza crust.
Next time I will put more spices in than I did; I think I was hesitant to over-spice, because if you put too much of something, you can't fix it. Underspice, and you can just sprinkle on more when you eat it! <3
