Jo's Going Raw!: Trying to eat raw

Trying to eat raw in a house full of cooked foodies is like an alcoholic trying to quit drinking in a bar.... WHILE BARTENDING.

NUT MILK RECIPE

1-2 cup raw almonds (soaked min 8 hrs or overnight)
2-3 dates if desired

Blend soaked and drained almonds with dates in blender, (may remove skins first for whiter milk and easier straining) slowly adding water first to make a paste and then slooowwwly adding water til you reach capacity of blender. Strain in a fine strainer, a mesh bag, or both. Gentle on the mesh bag as to not pop the seams! Taste the finished product and add more water to the finished product if necessary and you're done! Store in a glass jar for maximum "coldness" while storing in fridge.

This is messier than you think until you get the hang of it.. Start with clean hands and a wide bowl or two, preferably with a pour spout edge for tidy pouring.

Raw Mexican Soup or "Taco Soup"

Raw Taco Soup (serves two)

Blend the following Ingredients in blender:

2 tomatoes, chopped
2 large red bell peppers, chopped
1/4 cup sundried tomatoes, packed
1/4 cup fresh cilantro, packed
2 large stalks celery, chopped
3/4 cup water
1 tbsp lime juice
2-3 tbsp olive oil(add last )
1 tsp salt
3/4 tsp cumin
1/2 tsp chili powder
1/4 tsp paprika
1 clove garlic (optional!! raw garlic is powerful, folks)
Dash cayenne pepper (optional)

Optional toppings: tomato, avocado, cilantro, be creative! Idea: add corn next time and serve with healthy crackers / bread.
